Wagyu Don

Ingredients:

1 Onion, thinly sliced

3 Spring Onions, chopped

1 Garlic clove, thinly sliced

2 Tbsps Yakiniku Soy Sauce

1 Egg per person, lightly poached

Hot, cooked Rice

50-100gm thinly sliced meat per person

Recommended Wagyu cuts –      Short Rib Meat

                                                     Chuck Rib Meat

                                                     Flap Meat 

                                                     Yakiniku/BBQ Cut pre-sliced

Method:

  1. Defrost frozen wagyu in refrigerator for at least 24-48 hours. It’s easiest to slice your meat thinly when wagyu is semi frozen and ensure your knife is sharp.  Slice wagyu into 2-4mm thick slices then continue to defrost in fridge. Frozen pre-sliced sliced wagyu packs will defrost within 24 hours.
  1. Cook rice.
  1. Gently fry onion and add garlic in final two minutes.
  1. ½ hour before cooking the Wagyu slices, allow Wagyu to come close to room temp and lightly season with salt.
  1. Heat your grill or fry pan and cook your Wagyu slices over medium heat 30sec-1min on each side.
  1. When rice is cooked, serve into a medium size bowl. Lay the cooked wagyu slices on top of the rice and sprinkle with cooked onion and garlic. Pour small amount of yakiniku sauce on top, then your lightly poached egg on the very top. Garnish with chopped spring onion.
  1. Mix the egg into the wagyu and onions and you are ready to enjoy ‘wagyu don’ at home!
